Aloo Methi ki Sabzi (Fenugreek & Potato Curry)

Ingredients

  • Methi 2 big bunches , chopped
  • Oil 3-4 tbsp
  • Cumin seeds 1 tsp
  • Onion 1, sliced
  • Ginger paste 1 tsp
  • Garlic paste 1 tsp
  • Potatoes 4-5, cut into big chunks
  • Salt
  • Red chili
  • Turmeric powder
  • Garam Masala
  • Cumin powder
  • Dried fenugreek
  • Green chilies

Preparation

  1. Heat oil in a wok and add onion.
  2. Sauté for a minute and add cumin seeds and ginger and garlic paste. Sauté until aromatic.
  3. Add potatoes, salt, Red chili powder and turmeric powder.
  4. Stir fry the potatoes for 2 minutes and then add 1/4 cup water.
  5. Cover and allow to cook on low heat until potatoes are fully cooked.
  6. Now add methi leaves, dried fenugreek and green chilies and cover and cook for 5-6 minutes until done.
  7. Sprinkle garam masala and cumin powder.
  8. Serve hot with roti.
