Aloo Phali ki Sabzi (Potato and Long Bean Curry)

Ingredients

  • Oil 4-5 tbsp
  • Cumin seeds 1 tsp
  • Garlic 2 tsp, chopped
  • Onion 1 big, chopped
  • Potatoes 3 big, peeled and cut into big chunks
  • Chopped Green beans 2 cups (350-400 grams)
  • Salt to taste
  • Red chili powder 1 tsp or to taste
  • Turmeric powder 1/2 tsp
  • Coriander powder 1 tsp
  • Fresh coriander 4-5 tbsp, chopped
  • Green chilies 3-4
  • Garam masala 1 tsp

Preparation

  1. Heat oil in a cooking pot and add cumin seeds and garlic.
  2. Once aromatic, add onions and cook until they start to turn golden.
  3. Add potatoes and cook for a minute.
  4. Add green beans along with salt, red chili powder, turmeric powder and coriander powder.
  5. Mix and add 1-2 tbsp of water.
  6. Mix, turn the flame to lowest, cover and cook for 10-12 minutes or until the beans and potatoes are ready.
  7. Add fresh coriander, green chilies and garam masala.
  8. Give a stir and serve hot with roti or paratha. Enjoy!
