Ingredients
Dough for 6 kulcha
- Wheat flour (aata) 2 cups
- Baking powder 1 tsp
- Baking soda 1/4 tsp
- Sugar 1 tsp
- Salt 1/2 tsp
- Oil 6 tsp
- Yogurt 4 tbsp
- Lukewarm water as needed
Stuffing
- Boiled potatoes 2 medium
- Crumbled cottage cheese 1 cup
- Green chilies 1-2, chopped
- Fresh coriander 1-2 tbsp, chopped
- Fresh mint 1-2 tbsp, chopped
- Salt to taste
- Garam masala 1/2 tbsp
- Dried fenugreek 1/2 tbsp
- Red chili powder 1/2 tbsp
- Chat masala 1/2 tbsp
Other
- Kalonji 1 tbsp (nigella seeds)
- Melted butter 3 tbsp mixed with fresh coriander 1 tbsp, finely chopped
Preparation
- Dough: Add wheat flour, baking soda, baking powder, sugar, salt, oil and yogurt to a mixing bowl. Mix and knead using lukewarm water. Knead for 7-8 minutes.
- Cover and allow to rest for 2 hours.
- Stuffing: While the dough is resting, mix together potatoes, cottage cheese, green chilies, fresh coriander, fresh mint, salt, garam masala, dried fenugreek, red chili powder and chat masala. Stuffing is ready. Shape stuffing into balls.
- Ater 2 hours, shape the dough into balls and roll into 6 inch roti.
- Place a stuffing ball on the wheat roti and cover the ball with the roti.
- Place some kalongi on the dough ball and press it on the dough using your fingers.
- Now roll into a big roti.
- Cook on tawa from both sides.
- Now apply butter and coriander on one side.
- Repeat with the remaining dough.
- Alu Paneer Kulcha is ready! Serve with mint raita.
