Ingredients
Eggs
- Boiled eggs 6
- Red chili powder 1/4 tsp
- Turmeric powder 1/4 tsp
- Oil 1/2 cup
Masala
- Onions 2, chopped
- Cumin seeds 1 tsp
- Ginger paste 1 tsp
- Garlic paste 1 tsp
- Green chilies 2-3, sliced
- Tomato paste 5 tbsp
- Yogurt 1 cup
- Salt to taste
- Red chili if needed
- Garam masala 1tsp
- Coriander powder 2 tsp
- Water ad needed

Preparation
- Peel the hard boiled eggs, sprinkle chili powder and turmeric powder and mix.
- Heat oil in the cooking pot and add the eggs. fry for 2-3 minutes and take out.
- In the same oil add chopped onions and cumin seeds. Fry until aromatic.
- Add ginger and garlic paste and green chilies. Fry for a minute and then add tomato paste. Cook for 1 minute.
- Add yogurt, salt, red chili if needed, garam masala and coriander powder.
- Cook for a minute. Add 1 cup of water. Cover and cook on low for 6-8 minutes until the oil rises to the top.
- At this stage, add the eggs and more water if needed.
- Cover and cook for 5 minutes.
- Lastly, add green chilies.
- Enjoy with roti or rice.
Anda Masala Curry
