Anda Masala Curry

Ingredients

Eggs

  • Boiled eggs 6
  • Red chili powder 1/4 tsp
  • Turmeric powder 1/4 tsp
  • Oil 1/2 cup

Masala

  • Onions 2, chopped
  • Cumin seeds 1 tsp
  • Ginger paste 1 tsp
  • Garlic paste 1 tsp
  • Green chilies 2-3, sliced
  • Tomato paste 5 tbsp
  • Yogurt 1 cup
  • Salt to taste
  • Red chili if needed
  • Garam masala 1tsp
  • Coriander powder 2 tsp
  • Water ad needed

Garnish

  • Green chilies

Preparation

  1. Peel the hard boiled eggs, sprinkle chili powder and turmeric powder and mix.
  2. Heat oil in the cooking pot and add the eggs. fry for 2-3 minutes and take out.
  3. In the same oil add chopped onions and cumin seeds. Fry until aromatic.
  4. Add ginger and garlic paste and green chilies. Fry for a minute and then add tomato paste. Cook for 1 minute.
  5. Add yogurt, salt, red chili if needed, garam masala and coriander powder.
  6. Cook for a minute. Add 1 cup of water. Cover and cook on low for 6-8 minutes until the oil rises to the top.
  7. At this stage, add the eggs and more water if needed.
  8. Cover and cook for 5 minutes.
  9. Lastly, add green chilies.
  10. Enjoy with roti or rice.
