Super Moist Apple Cake

Ingredients

For Apple Filling

  • Red apples 1 kg
  • Sugar ¼ cup
  • Cinnamon powder 1 teaspoon

For Batter

  • Eggs 5 (or 4 if the eggs are big)
  • Granulated sugar (table sugar) 1 cup
  • All purpose flour 2 cups
  • Baking powder 2 tablespoons
  • Milk ¾ cup
  • Icing Sugar for dusting
  • Butter for greasing the pan

Instruction

  1. Wash the apples thoroughly and peel them.
  2. Core them to get rid of the seeds.
  3. Grate them manually with a grater or use a food processor.
  4. Transfer the grated apples to a pan.
  5. Add sugar.
  6. Allow to cook until the water evaporates. Do not over cook the mixture.
  7. Turn the flame off.
  8. Add cinnamon powder.
  9. Mix and allow to cool.
  10. Preheat the oven to 180 *C for 20 minutes.
  11. In a bowl, Sift the flour and add baking powder to it. Mix.
  12. In a separate bowl, crack the eggs and add sugar to it. Eggs should be at room temperature.
  13. Note: You can take them out of the refrigerator an hour before you start the recipe to bring them to room temperature.
  14. Beat the eggs and sugar until light yellow and fluffy. It should be double in volume by now.
  15. Add a little flour mixture into the batter and mix then add milk and mix. Keep alternating until all the flour and milk is incorporated into the mixture.
  16. Grease a baking tray (I used 14 inch tray) with butter and dust with all purpose flour.
  17. Pour half of the batter into the tray and bake at 180 *C for 10 minutes.
  18. Take out. carefully spread apples on it. Make sure not to break the upper layer of the cake. The cake is still raw inside. Breaking the upper layer means the apples will sink into the bottom of the cake.
  19. After you have nicely spread the apples, pour the remaining mixture on the apples and bake for 30-45 minutes at 180*C.
  20. After 30 minutes, check the cake by inserting a tooth pick in the center of the cake. If it comes out clean that means the cake is ready.
  21. Allow to cool for half an hour on your kitchen shelf.
  22. Dust with icing sugar. Enjoy with a cup of tea or coffee! Happy winter!
