Apple Walnut French Toast Cups
Ingredients
French Toast
- Bread slices 4
- Eggs 2
- Milk 1/2 cup
- Fresh cream 1/4 cup
- Light brown sugar 2 tablespoons
- Vanilla essence 1 teaspoon
- Cinnamon powder 1 teaspoon
Apple Filling
- Apples 2 medium
- Lemon Juice 1 tablespoon
- Light Brown Sugar 3 tablespoons
- Cinnamon powder 1 teaspoon
- Corn starch 1 tablespoon
- Water 2 tablespoon
Topping
- Walnuts as needed
Preparation
- Preheat the oven to 180*C.
- Chop the bread slices into 1 cm small chunks.
- In a bowl, add eggs, milk, fresh cream, vanilla, brown sugar and cinnamon powder and whisk.
- Add bread slices and allow to soak until all the egg is absorbed by the bread (about 5-8 minutes) . You can add more bread slices if there is a little bit of liquid left after soaking the bread.
- In a pan add all the ingredients of apple filling and cook on lowest flame possible until the apples are soft and the filling is thick. Add more water if needed during the cooking process.
- Line a muffin tin with paper cups and fill half with the bread mixture.
- Press gently with spoon to create an indentation.
- Pour the filling in the indentation and top with the bread mixture.
- Bake in the preheated oven for 20-25 minutes at 180*C.
