Ingredients
Marination
- Boneless Chicken breasts or thighs cut into 1.5″ pieces 1 kg
- Thick yogurt 1.5 cup
- Mayonnaise 1/2 cup
- Garlic Paste 1 tbsp
- Ginger paste 1 tbsp
- Oil 1/4 cup
- Salt to taste
- Red chili powder 3/4 tbsp or to taste
- Garam Masala Powder 1 tbsp
- Cumin Powder 1 tbsp
- Cinnamon Powder 1/2 tbsp
- Paprika powder 1.5 tbsp
- Chat masala 1/2 tbsp
- Amchur powder (Dry mango powder) 1/2 tbsp
- Red food color 1/2 tbsp
- Lemon juice 4 tbsp
Other
- Oil for grilling
- Skewers
- Bell peppers, cubed
Preparation
- In a clean dry bowl add the thick yogurt, ginger and garlic paste and the mayo and whisk well until fully combined & smooth.
- Next, add all the remaining marination ingredients and mix well.
- Add to chicken pieces and marinate for 1 hour or preferably overnight.
- Next, skewer the meat and bell peppers in the skewers and set aside.
- Heat a griddle or non stick skillet over medium heat. When the pan becomes moderately hot brush it with oil.
- Next, place the skewers and cook over medium heat rotating sides from time to time. The meat will be fully cooked in 15 mins.
- Now, turn the flame to the highest setting and cook all sides of the BBQ Chicken Boti for that beautiful, charred look.
