BBQ Pulled Chicken Burgers
With Red Cabbage Coleslaw

Ingredients For Coleslaw:

  • Red cabbage 2 cups
  • Carrots 2 cups
  • Onion medium sized 1
  • Jalapeno chopped 2 tablespoons
  • Paprika ½ teaspoon
  • Garlic powder 1 teaspoon
  • Pepper ½ tsp (or to taste)
  • Salt ½ tsp (or to taste)
  • Olive oil ¼ cup
  • Honey 1 tablespoon
  • Apple cider vinegar 1 tablespoon
  • Juice of 1 lime

ingredients For BBQ Chicken Filling:

  • Olive Oil 3 tablespoons
  • BBQ Sauce 1 Cup
  • Lime Juice 3 tablespoons
  • Onion Powder 1 teaspoon
  • Garlic Powder 1 teaspoon
  • Paprika 1 teaspoon
  • Chili Powder ½ teaspoon
  • Black Pepper 1 Pinch
  • Salt (taste the mixture first and if needed then add according to taste. Mostly BBQ sauce has salt in it).
  • Chicken Boiled and shredded 3 Cups (equal to 2 chicken breasts)

 

preparation:

  1. Thinly shred the red cabbage.
  2. Grate the carrots.
  3. Chop an onion.
  4. Chop pickled jalapenos.
  5. Mix all the vegetables in a mixing bowl.
  6. To prepare the dressing, in a separate bowl add paprika powder, garlic powder, black pepper powder, salt, olive oil, honey, apple cider vinegar and juice of one lime and mix until well combined.
  7. Add the dressing to the vegetables and stir. Coleslaw is ready. Set aside.
  8. In a pan add olive oil, barbecue sauce, lime juice, onion powder, garlic powder, paprika powder, chili powder, black pepper powder and salt. Mix over medium heat till it boils.
  9. Add boiled and shredded chicken to the sauce and mix. Filling is ready.
  10. Take a burger bun. Put the filling. Top it with the coleslaw and add ingredients of your liking e.g. cheese. Toast in an oven for 2 mins to melt the cheese.
  11. Top with the other side of the bun. Serve hot. Enjoy!
