Beef Nihari
Ingredients for Nihari Spice Mix
- Bay leaf 4
- Star anise 2
- Cinnamon sticks 3
- Green cardamoms 8
- Black cardamoms 2
- Cloves 6
- Coriander seeds 8 tsp
- Cumin seeds 8 tsp
- Black peppercorns 1 tsp
- Fennel seeds 6 tsp
- Red chili flakes 8 tsp
- Turmeric powder 2 tsp
- Garam masala 4 tsp
- Paprika powder or Kashmiri chili powder 4 tsp
Ingredients for Nihari:
- Nihari spice mix 2 tbsp
- Beef/chicken 1 kg
- Oil 1 cup
- Large onions, finely chopped 2
- Ginger paste 1 tbsp
- Garlic paste 1 tbsp
- Water (or as needed) 8-10 cups
- Salt to taste
- Whole wheat (atta) flour 1/2 cup
- Julienned ginger (for garnishing)
- Lemon slices (for garnishing)
- Fresh chopped coriander (for garnishing)
- Chopped green chilies (for garnishing)
Preparation:
- Add the whole spices mentioned under the whole spice mix to a dry pan and roast over a medium to low heat till its aromatic. Keep stirring to prevent it from burning.
- Grind this using a grinder and then pass through a sieve to remove big particles.
- Add rest of the powder spices and mix. This spice mix can be stored in a refrigerator up to a month.
- Pour oil in a pressure cooker and allow it to heat.
- Add onions and allow to just soften. Then add the ginger garlic paste and saute for 1 minute until raw smell goes off.
- Add the beef and fry over high flame till the water evaporates.
- Add 2 tbsp of the ready made nihari masala and cook till there is no more smell of raw meat.
- Add water and salt.
- Close the pressure cooker and allow to cook for 20 mins.
- In a separate pan dry heat flour (atta) till it turns a light golden-brown color.
- Make a spoonful of flour and mix it with water to turn to a paste. Add to the nihari slowly while stirring till it thickens.
- Alternatively, you can use corn flour mixed in a little water. It gives more glossy and creamy look to the dish.
- Cook until the flour is cooked (1-2 minutes).
- Garnish and serve hot. Enjoy.
