Ingredients
- Chickpeas 1 cans (or 1 cup boiled chickpeas)
- Lemon juice 1 tsp
- Olive oil 3 tbsp
- Garlic cloves 3, grated
- Salt to taste
- Water as needed
- Beetroots 2 medium, steamed and cut into thick pieces
Preparation
- In a blender, add chickpeas, lemon juice, olive oil, garlic cloves and salt.
- Start the blender and keep adding 1-2 tbsp water and blend until the hummus is thick and creamy. How is water you add depends on which consistency you prefer for the hummus.
- Lastly, keeping the blender on, add beetroot pieces one by one until you get the desired color.
- Beetroot Hummus is ready!
- Enjoy with Pita bread or spread it as topping on a chicken and rice casserole.
