Ingredients
For Mutton:
- Mutton 1 kg (or beef)
- Oil 3/4 cup or more as per your preference
- Onions 2 big, sliced
- Cloves 6
- Black peppercorns 8-10
- Black cardamoms 4
- Green cardamoms 4
- Cinnamon sticks 2
- Bay leaves 2
- Mace flower 1
- Salt to taste
- Ginger paste 1 tbsp
- Garlic paste 1 tbsp
- Green chilies chopped 1 tbsp (or more, as we will not use red chili powder in this recipe)
For Paste: - Yogurt 4 tbsp
- Kashmiri lal mirch (or Paprika powder) 2 tsp
- Turmeric powder 3/4 tsp
- Coriander powder 2 tsp
- Fried onions 2 tbsp
Garnish - Fresh coriander
- Green chilies
Preparation
- In a pressure cooker, add oil, onion and all the whole spices. Saute until onion is soft.
- Add ginger paste, garlic paste and saute for a few minutes.
- Add meat and salt and cook on high heat until the smell of meat is gone 10-12 minutes.
- Add 1 cup water and pressure cook for 4 whistles until the meat is fully cooked. Relase the pressure and check the meat.
- Blend together the ingredients of the paste (yogurt, paprika, turmeric and coriander powder and fried onions).
- Allow to cook for 10 minutes until the yogurt is cooked and oil rises to the top.
- Garnish with fresh coriander and chilies and enjoy with naan or roti.
