Black Forest Dome Cake

Ingredients

Chocolate Cake

  • Eggs 6, large, at room temperature
  • Sugar 1 cup
  • Milk 1/2 cup, at room temperature
  • Oil 1/3 cup
  • All-purpose flour 1 cup + 3/4 cup
  • Cocoa powder 1/2 cup
  • Salt 1/4 tsp
  • Baking powder 1 tbsp

Ganache

  • Whipping cream (unsweetened) 1/4 cup
  • Chocolate chips 1/4 cup

Whipped Cream

  • Whipping cream (unsweetened) 3 cups
  • Powdered sugar 1 cup
  • Cream cheese 3/4 cup (I used Kiri Cream cheese spread)

Cake Dip

  • Milk 1/4 cup (or more if needed)

Other Ingredients

  • Fresh cherries 20-25
  • Pineapple 1 can, juice removed, pineapple cut into chunks
  • Walnuts 1/4 cup, chopped
  • Walnuts 3-4 tbsp, powdered and dry roasted

Preparation

Chocolate Cake

  1. Preheat the oven at 180°C.
  2. In a big bowl, beat eggs and sugar until foamy, light in color and about 4 times in volume. It should take between 8-10 minutes using electric mixer.
  3. Add milk and oil and beat for 2 more minutes. Wet mixture is ready.
  4. In a separate bowl, sift the all-purpose flour, cocoa powder and baking powder. Add salt and mix everything well. Dry mixture is ready.
  5. Add half of the dry mixture to the wet mixture and mix using spatula. Do not use whisk or electric mixture at this time otherwise the wet mixture will deflate, resulting in dense cake.
  6. When mixed, add the remaining dry mixture
  7. Prepare an 8-inch pan and pour the mixture in it.
  8. Bake at 180°C for 30-35 minutes or until the toothpick inserted comes out clean.
  9. Allow to cool at room temperature.
  10. Cut the cake into two layers/tiers.
  11. Cut one layer into 1-inch chunks. Keep other layer aside for later use.

Ganache

  1. Heat the whipping cream in microwave for 30 seconds or until cream is very hot.
  2. Add the chocolate chips and mix. Allow to cool down to room temperature.

Whipped Cream

  1. Add whipping cream and powdered sugar in a bowl and beat until soft peaks are formed.
  2. Add cream cheese and beat again until stiff peaks are formed.

Cake Dip

  1. Take one third of the whipped cream and add about 1/4 cup of milk to it.
  2. Mix using a spatula until just combined. Consistency should be like pancake batter.
  3. Put the remaining whipped cream back in the refrigerator for later use.

Assembly

  1. Take a bowl in which you want to assemble the cake. It should be 8 inch wide.
  2. Cover the inside of the bowl with cling film.
  3. Take out the whipped cream from the refrigerator and spread 2 tbsp in the bowl.
  4. Now start dipping the cake chunks in cake dip and arranging the chunks in the bowl.
  5. When the cake layer is complete, top with pitted cherries, pineapple chunks and chopped walnuts.
  6. Make a second layer of cake chunks and top with cherries, pineapples and walnuts.
  7. Spread a thin layer of whipped cream all over and place the intact cake layer on it.
  8. Press gently and cover with cling film.
  9. Refrigerate for 2-3 hours or until the cake is completely chilled.
  10. Now and take the cake out on a cake board.
  11. Cover with the remaining whipping cream.
  12. Pour ganache into a piping bag.
  13. Pipe onto the cake as shown in the video.
  14. Cover the rim of the cake with powdered walnuts.
  15. Dome cake is ready.
  16. Enjoy!
