Blueberry Tea Cake

Ingredients

  • Wheat flour 1 + 1/4 cup
  • Quick oats/ Rolled oats 1 + 1/4 cup
  • Baking powder 1 + 1/2 teaspoon
  • Baking soda 1/2 teaspoon
  • Salt 1/4 teaspoon
  • Eggs 2 large
  • Brown sugar 1/2 cup
  • Oil 1/3 cup
  • Milk 1/4 cup -at room temperature
  • Vanilla essence 1 + 1/2 teaspoon
  • Yogurt 1 cup
  • Blueberries 2 cups [or any fruit of your choice]

Blueberry Oats Cake

Preparation

  1. Preheat the oven to 180*C (approx. 350*F) and grease 8 inches pan with butter and then dust some flour on it. Set aside.
  2. First, in a large bowl, add the dry ingredients: wheat flour, oats, baking soda, baking powder and salt and mix, Dry ingredients are ready. Set aside.
  3. Wash the blueberries and coat with 1-2 tablespoons of the dry mixture. This will prevent them sinking at the bottom of the pan while baking.
  4. Next, in another bowl, whisk together eggs, brown sugar, milk, oil vanilla and yogurt.
  5. Then, add liquid ingredients mixture to the dry ingredients and stir until just combined. Note: Do not overmix otherwise mixture will become sticky and thick.
  6. Finally, gently fold in blueberries and pour the batter in prepared pan, smooth the top and bake in the preheated oven at 180*C (approx. 350*F) for 45-55 minutes or until the toothpick inserted in the center comes out clean. If the top starts browning too quickly, loosely tent the top with aluminium foil or lower the temperature to 170*C.
  7. Cool 20 minutes in the pan, then transfer on a rack and cool completely.
  8. Enjoy with tea at breakfast or tea time!
