Ingredients
Vanilla Cookies
- Plain flour 100 grams
- Vanilla powder 1/2 tsp
- Unsalted butter 75 grams, at room temperature
- Powdered sugar 30 grams
- Milk 3 tsp
Chocolate Cookies
- Plain flour 80 grams
- Cocoa powder 20 grams
- Vanilla powder 1/2 tsp
- Unsalted butter 75 grams, at room temperature
- Powdered sugar 45 grams
Coating
- Dark chocolate
- White Chocolate
Preparation
- Vanilla Cookies: In a bowl, sift plain flour and add vanilla powder. Mix
- In another bowl add butter and powdered sugar and liquid vanilla (if using liquid vanilla) and whisk well until creamy and light in colour.
- Add the flour mixture to the butter mixture and mix to just combine. Do not over mix at this stage.
- Add milk and mix again just to combine.
- Now transfer the cookie dough to a cookie press or a piping bag fitter with star nozzle.
- Pipe the cookies on to a baking paper lined baking tray.
- Freeze the cookies for 10 minutes.
- Chocolate Cookies: In a bowl, sift plain flour, cocoa powder and vanilla powder. Mix.
- Rest of the steps are same as of vanilla cookies.
- Baking: While the cookies are in the freezer, preheat the oven at 170˚C using lower rod only.
- Take the cookies out and bake at 170˚C for 12-15 minutes (unil the cookies surface is not shiny anymore).
- Take out and allow to come to room temperature.
- Meanwhile, melt chocolate of your choice and dip half of the cookies in it. Let it set.
- Enjoy your butter cookies with tea or coffee!
