Cakes in Disposable Cups without Oven (No egg, No Butter)
Ingredients
Plain flour 1 cup
Baking soda 1/4 tsp
Baking powder 1 tsp
Salt half pinch
Milk 1/2 cup
Vinegar 1 tsp
Granulated sugar 1/2 cup
Oil 1/4 cup
Cocoa powder 1 tbsp
Vanilla 1/4 tsp
Chocolate chips 1-2 tbsp
Raisins (kishmish) 1-2 tbsp
Disposable cups
Preparation
Heat a big pot on medium flame with 1 cup salt in it.
In a bowl, make buttermilk by adding milk and vinegar and allow to curdle for 5 minutes.
Meanwhile, sift together plain flour, baking soda, baking powder and salt.
When the buttermilk is ready, add oil and sugar in it and whisk until emulsified (oil is not separate from the buttermilk).
Now add this mixture to plain flour mixture and whisk until combined. Batter will be a bit thick. Now add 2-3 tsp of milk and mix to get the consistency of cake batter.
Divide the batter into two parts.
Batter part 1: Add vanilla essence and mix. Wash and drain the raisins and coat them in plain flour. This will help then stay suspended in the batter.
Add coated raisins to the batter and stir gently to distribute the raisins. Over-mixing will remove the coating, and raisins will sink to the bottom while baking.
Pour in two disposable cups.
Batter part 2: Add a tbsp of coco powder and gently mix until combined.
Add chocolate chips and stir gently. Pour in two disposable cups.
Transfer to the pot for baking. Cover the pot and bake at low to medium flame for 15-18 minutes or until the toothpick inserted comes out clean.
