No Carb Rice – Cauliflower Rice

Ingredients

  • Cauliflower 1 small head
  • Olive oil 1 tsp
  • Ginger paste 1/4 tsp
  • Garlic paste 1/4 tsp
  • Fresh coriander 1 cup, chopped

Preparation

  1. Cut the cauliflower into florets. Wash and drain.
  2. Chop in a chopper into rice (fine grains). You can also use a grater to grate the cauliflower.
  3. Add oil, ginger and garlic paste in a frying pan and fry at low heat until raw smell is gone.
  4. Add cauliflower rice to the frying pan and sauté on high until the rice is just cooked.
  5. NOTE: Avoid cooking at low heat or for too long. This would make the cauliflower rice mushy.
  6. Lastly, add chopped coriander. Give it a stir.
  7. Enjoy your carb free rice!
