Chatpata Mutton Masala
Ingredients
- Mutton/Beef 1.5 kg (with bones)
- Oil 3/4 cup
- Onions 3 big sized, sliced
- Green cardamoms 10
- Black cardamoms 4
- Cinnamon sticks 2
- Cloves 12
- Black peppercorns 1/4 tsp
- Ginger paste 3 tsp
- Garlic paste 3 tsp
- Salt 3/4 tsp
- Red chili powder 3/4 tsp
- Turmeric powder 1/2 tsp
- Coriander powder 6 tsp
- Water as needed
- Yogurt 1/2 cup
- Garam masala 1/2 tbsp
- Coriander powder 1/4 tbsp
- Cumin powder 1/4 tbsp
- Nutmeg powder (jaifal) 1/2 tsp
- Garam masala 1/2 tsp
Preparation
- Heat oil in a pressure cooker and add slice onions. Saute until soft.
- Add green cardamoms, black cardamoms, cinnamon, black peppercorns and cloves.
- Saute until the onions just start to turn golden.
- Add cleaned and washed mutton and stir fry on medium flame.
- When meat starts to release moisture, add ginger and garlic paste.
- Cook until the water has evaporated. By this time the raw smell of the mutton would be gone.
- Add salt, red chili powder, turmeric powder and coriander powder, stir fry for 1 minute until fragrant.
- Add enough water to cover the mutton and pressure cook for 10 minutes (or more depending on the meat).
- After the pressure is released, put the flame on and add yogurt and mix on low heat, cook for 2-3 minutes.
- Lastly add garam masala and nutmeg powder and turn the flame off.
- Serve immediately with roti or naan. Enjoy!
