Chicken Chow Mein

Ingredients

For Noodles

  • Spaghetti 400g
  • Oil 2 tbsp
  • Salt 2 tsp

For Marination

  • Boneless chicken 800g
  • soy sauce 3 tbsp
  • Black pepper powder 1 tbsp
  • Corn Flour 2 tbsp full

For Chow Mein sauce

  • Soy Sauce 4 tbsp
  • Chili sauce 4 tbsp
  • Honey 4 tbsp
  • Vinegar 4 tbsp
  • Chili Flakes 1 tsp

Other ingredients

  • Oil 1/2 cup
  • Garlic 6 cloves
  • Ginger 2-inch piece
  • Carrot 1
  • Green Capsicum 1
  • Red capsicum 1
  • Cabbage 1 cup
  • Spring Onions 2

Preparation

  1. Boil water in a pot and add the spaghetti, salt and oil. Mix and boil the pasta according to the package instructions.
  2. Once done, drain into a basket and wash the boiled spaghetti under tap water to stop the cooking process. Allow to drain.
  3. Cut the chicken breast into half (thickness wise) so that we can have thin fillets. Cut the fillets into thinnest strips possible. Transfer to a bowl.
  4. Add corn flour, soy sauce and black pepper powder. Mix and allow to marinate for 15 minutes.
  5. In the meanwhile, cut the vegetables (Carrot, capsicum, cabbage and ginger into juliennes (thin strips). Grate garlic and chop spring onions.
  6. To prepare chow mein sauce, mix all the ingredients (soy sauce, chili sauce, vinegar, honey and chili flakes) in a small bowl and keep aside.
  7. In a skillet, heat 1/2 cup of oil and add the chicken strips. Stir fry the chicken on high flame so that the chicken does not release its moisture and stays soft when cooked. Once the chicken is cooked,  take it out in a bowl.
  8. To the same skillet, add spring onions, garlic and ginger and fry on a medium flame until aromatic. Do not let it brown.
  9. Next turn the flame high and add the vegetables (Capsicums, cabbage and carrot). Stir fry until the green color of capsicum becomes vibrant (turns bright green).
  10. NOTE: Do not fry for too long otherwise the vegetables will become soft. We need crunchy vegetables.
  11. Add boiled spaghetti, chow mein sauce and chicken.
  12. Mix everything up on high flame for just one minute (not more than a minute).
  13. Serve immediately! Enjoy!
