Chili Lime Chicken Skewers

Ingredients

  • Boneless Chicken 1 kg, cut into cubes
  • Olive oil 2-3 tbsp
  • Fresh coriander 1 cup, chopped
  • Lemon juice (1 big lemon or 2-3 small limes)
  • Lemon rind 2 tsp
  • Garlic cloves 5, grated
  • Green chilies 1-2, chopped
  • Salt to taste
  • Chili flakes 1 tsp

Preparation

  1. In a mixing bowl add chopped fresh coriander, lemon juice, lemon rind, garlic cloves, green chilies, salt, red chili flakes and olive oil and mix the marinade well.
  2. Cut the boneless chicken into cubes and add the marinade.
  3. Mix well and thread the chicken onto the skewers.
  4. Cook for 5-7 minutes on each side or until chicken is cooked through.
  5. Serve with steamed broccoli, steak sauce and dinner rolls.
  6. Enjoy!
