Chocolate Marble Cookies

Ingredients

  • Plain flour 1.5 cup
  • Corn flour 1 tbsp
  • Baking soda 1 tsp
  • Granulated sugar 3/4 cup
  • Butter 113 grams, at room temperature
  • Milk 2 tbsp, at room temperature
  • Cocoa powder 1 tbsp
  • Liquid vanilla essence 1 tsp

Preparation

  1. In a bowl, add plain flour, corn flour and baking soda. Mix and keep aside.
  2. In another bowl, add sugar, butter and milk. Beat until light and creamy.
  3. Add the flour mixture to the butter sugar mixture and using hands, mix until it forms dough.
  4. Do not over mix.
  5. Divide the dough into two equal parts.
  6. With one part of the dough make 16 balls. This is our white part for the marble effect.
  7. To the other part, add cocoa powder and vanilla essence and mix. Make 16 parts with this chocolate dough. This is our brown part for the marble effect.
  8. Take one white ball and flatten it into a disc. Take a brown ball, flatten it and place it on the white disc. Repeat the process one more time and you have 4 discs stacked on top of each other.
  9. Using a knife, cut this into 4 parts. Roll each part into a ball. This will give you a cool marble effect.
  10. Now put the marble ball on a flat surface and smash it using the palm of your hand.
  11. Repeat with the remaining dough balls.
  12. Place the cookies on a baking tray lined with parchment paper.
  13. Bake at 175°C for 10 to 12 minutes. As soon as you see the shine on the cookies is gone take them out of the oven (they should still be soft though) and allow them to cool down to room temperature. Texture of the cookies will change from soft to crunchy and crumbly as they cool.
  14. Enjoy with tea or coffee!
