Cinnamon Tea Cake

Ingredients

Batter

  • Butter 115 grams, at room temperature
  • Granulated sugar 150 grams
  • Eggs 2, at room temperature
  • Vanilla essence 1 tsp
  • Milk 180 ml, at room temperature
  • Plain flour 210 grams
  • Baking powder 2.5 tsp
  • Cinnamon powder 1 tsp
  • Salt 1/4 tsp

Topping

  • Butter 1 tbsp, at room temperature
  • Granulated sugar 1 tbsp
  • Cinnamon powder 1/2 tsp

Preparation

  1. Preheat the oven to 180°C.
  2. Prepare an 8-inch pan by greasing the bottom and placing a parchment paper in it.
  3. In a mixing bowl, add granulated sugar and butter and beat using an electric beater until light yellow in color.
  4. Add eggs and vanilla essence and beat at high speed until light, creamy and well combined. NOTE: At this stage, if the mixture looks curdled it means you need to beat the batter more so that it gets homogenized.
  5. Sift the plain flour, and baking powder into the egg batter.
  6. Also add cinnamon powder and salt.
  7. Beat again until all the well combined. Do not overmix at this stage.
  8. Bake at 180°C, using both upper and lower rods for 30-35 minutes or until the toothpick inserted comes out clean.
  9. Take the cake out of the oven.
  10. Topping: In a small bowl, mix butter, sugar and cinnamon.
  11. Apply it on the cake while the cake is still hot.
  12. Cinnamon tea cake is ready. Serve with tea or coffee. Enjoy!
