Ingredients
Batter
- Butter 115 grams, at room temperature
- Granulated sugar 150 grams
- Eggs 2, at room temperature
- Vanilla essence 1 tsp
- Milk 180 ml, at room temperature
- Plain flour 210 grams
- Baking powder 2.5 tsp
- Cinnamon powder 1 tsp
- Salt 1/4 tsp
Topping
- Butter 1 tbsp, at room temperature
- Granulated sugar 1 tbsp
- Cinnamon powder 1/2 tsp
Preparation
- Preheat the oven to 180°C.
- Prepare an 8-inch pan by greasing the bottom and placing a parchment paper in it.
- In a mixing bowl, add granulated sugar and butter and beat using an electric beater until light yellow in color.
- Add eggs and vanilla essence and beat at high speed until light, creamy and well combined. NOTE: At this stage, if the mixture looks curdled it means you need to beat the batter more so that it gets homogenized.
- Sift the plain flour, and baking powder into the egg batter.
- Also add cinnamon powder and salt.
- Beat again until all the well combined. Do not overmix at this stage.
- Bake at 180°C, using both upper and lower rods for 30-35 minutes or until the toothpick inserted comes out clean.
- Take the cake out of the oven.
- Topping: In a small bowl, mix butter, sugar and cinnamon.
- Apply it on the cake while the cake is still hot.
- Cinnamon tea cake is ready. Serve with tea or coffee. Enjoy!
