Crispy Spinach Pakora

Ingredients

  • Fresh spinach 1 medium bunch, finely chopped
  • Onion 1 small, chopped
  • Ginger paste 1/4 tsp
  • Garlic paste 1/4 tsp
  • Green chilies 1-2, sliced
  • Besan Pakora Mix 4-5 tbsp – Recipe below

Besan Pakora Mix

  • Besan (Gram flour) 6 tbsp
  • Corn flour 1 tbsp
  • Rice flour 1 tbsp
  • Salt to taste
  • Turmeric powder 1/2 tsp
  • Cumin powder 1 tsp
  • Ajwain (carom seeds) 1/4 tsp
  • Baking soda a pinch
  • Red chili powder to taste
  • Chat Masala 1 tsp
  • Red chili powder to taste

Ingredients

  1. Add spinach, onion, ginger paste and garlic paste and green chilies to a bowl.
  2. Add 4 heaped tbsp of besan pakora mix.
  3. Mix everything well. Now add little water and mix to form a thick mixture.
  4. Let the mixture stand for 5 minutes.
  5. Heat oil and add the spinach pakora mixture in small dollops.
  6. Fry until golden.
  7. Take out and enjoy with mint chutney.
