Easy Chicken Tikka on Stove top
Ingredients
Marination # 1
- Chicken boneless 1 kg, cut into 2 inch chunks
- Salt to taste
- Red chili powder 1 tsp
- Turmeric powder 1/2 tsp
- Ginger paste 1 tbsp
- Garlic paste 3/4 tbsp
- Lemon juice 4 tbsp
Marination # 2
- Thick yogurt 1/2 cup
- Oil 2 tbsp
- Kashmiri red chili powder 2 tsp
- Garam Masala 1 tsp
- Cumin powder 2 tsp
- Dried fenugreek/methi 1 tbsp
- Black salt 1 pinch
- Chat Masala 1 tsp
Other ingredients
- Red Food color 1/4 tsp
- Live Charcoal
Preparation
- Dry roast the fenugreek and allow to cool.
- In a bowl add chicken and the ingredients of the “Marination # 1” and mix. Cover and refrigerate for 30 minutes to 1 hour.
- Now in a small bowl add yogurt and all the other ingredients of the “Marination # 2” and mix well. Add this to the chicken and mix.
- Cover and allow to marinate in the refrigerator for 2 hours or preferably overnight.
- To cook the chicken tikka pieces, first add red food color to the chicken pieces and mix then Heat oil in a big wok and add the pieces. Cook on medium to high flame until charred from the outside. Turn off the flame.
- Heat a small charcoal on gas flame. Hold it with a kitchen tong & place it in the small bowl.
- Place this bowl in the middle of the wok having chicken tikka pieces. Pour some oil on the coal and cover with a lid immediately. Allow the smoke to be absorbed by the chicken pieces. When the smoke is clear, open the lid and dish out the chicken pieces.
- Serve immediately with some raita and tamarind chutney. Enjoy!
