Eggless Sugar Cookies / Sheep Cookies Eid ul Adha Edition

Ingredients

  • Icing sugar 150 grams (or powdered sugar 150 grams + 1 tsp corn flour)
  • Butter at room temperature 120 grams
  • Water 25 grams at room temperature
  • Vanilla essence 1/2 tsp
  • Plain flour 240 grams
  • Salt 1/2 tsp
  • Milk chocolate and white chocolate for decoration

Preparation

  1. In a mixing bowl, add powdered sugar and butter.
  2. Whisk until the moxture becomes fluffy, airt and light in color. I used electric whisk but you can use manual whisk too.
  3. Add vanilla and water and whisk until smooth again.
  4. Sift plain flour, add salt and mix. Add this to the butter mixture and fold in until combined. Do not over-mix at this stage.
  5. Roll into thin sheet and cut out the cookies.
  6. Place the cookies on a baking tray and refrigerate for 10-15 minutes or until completely chilled.
  7. Meanwhile preheat the oven to 180°C using lower rod only.
  8. Take the tray out of the fridge and bake the cookies for 10-12 minutes at 180°C.
  9. Take out and allow to cool down.
  10. Melt chocolate and design sheep as shown in the video.
  11. Enjoy!
