Dahi kay kabab (Yogurt cutlets)

Ingredients

  • Yogurt 1 cup
  • Cottage Cheese 1/2 cup
  • Bread slices 4, crumbled
  • Green chili 1-2, chopped
  • Fresh Coriander 2 tbsp, chopped
  • Onion 1 small sized, chopped
  • Salt as needed
  • Chat Masala 1 tsp
  • Garam Masala 1/2 tsp
  • Red chili powder (if you want to make it extra spicy)

Preparation

  1. Place yogurt in a muslin cloth. Bring together the edges and gently press to drain the extra whey.
  2. Hang the cloth for a few hours (4-5) or put some weight over it.
  3. Take out the thickened yogurt into a bowl. It should be reduced to half cup and there should not be any extra whey left.
  4. Use a food processor or a manual chopper to grind the bread slices into crumbs. Add these bread crumbs, cottage cheese and all the other ingredients to the yogurt.
  5. Mix well and taste, if anything is needed you can add at this stage.
  6. Apply some cooking oil and shape into cutlets.
  7. Shallow fry on a medium to low heat until the kababs are golden brown in color and crispy on the outside and soft and creamy inside.
  8. Enjoy with your favorite dip.
