Ingredients
- Plain flour 2 cups
- Instant yeast 1 tsp
- Sugar 1 + 1/2 tbsp
- Egg 1 at room temperature
- Oil 1 tbsp
- Milk 150 ml (Luke warm)
- Cranberries or raisins 3 tbsp
Preparation
- In a mixing bowl add plain flour, instant yeast and sugar and mix.
- In a small bowl, whisk together egg and oil and then add milk and mix.
- Add this liquid to the plain flour and knead for 7-8 minutes until the dough is soft and smooth and lump free.
- NOTE: Dough would be quite sticky but its ok, don’t add more flour while kneading otherwise the bread will be hard.
- Lastly, add cranberries or raisins and knead until incorporated.
- Divide the dough into 2 equal parts.
- Dust your clean countertop with some plain flour and roll the dough into 1-cm thick circle shape.
- Now roll it like a burrito or shawarma and place it on the baking tray lined with parchment paper.
- Repeat with the second dough.
- Now apply some plain flour on the top of each dough and using a knife, cut diagonally like shown in the video.
- Cover the baking tray with a thick kitchen towel and allow the dough to rise until double in size (30-40 minutes, depending on the temperature of your kitchen).
- Preheat the oven to 180°C and bake at bake at 180°C for 15 minutes or until golden.
- Take out, cut into slices and enjoy hot or cold, your choice!
- Tastes best with some margarine and sugar on top!
