Ingredients
- Desi ghee (Clarified Butter) 1/4 cup
- Cumin seeds 2 tsp heaped
- Bay leaves 2
- Black peppercorns 5-6
- Clove 5-6
- Cinnamon sticks 2
- Green cardamoms 4
- Uncooked rice 1.5 cups soaked in water for at least an hour
- Water 3 cups
- Salt to taste
Preparation
- Drain the water well from the soaked rice and keep aside.
- Heat desi ghee on low flame in a cooking pot and add cumin seeds, allow to crackle and add the rest of the whole spices.
- Fry until fragrant and add drained rice. Fry stirring carefully until the rice absorb the oil and the moisture and the base of the pot looks dry.
- Now add 3 cups of water, salt and give the rice a stir.
- Turn the flame medium to high, cover and allow the rice to absorb all the liquid.
- When the base of the pot is dry, put the zeera rice on dum for 5-8 minutes.
- Enjoy!
