Hawaiian Sticky Chicken
Ingredients:
- Chicken Breasts 1/2 kg
- Corn starch 1/2 Cup
- All purpose flour 1/2 Cup
- Salt to taste
- Black pepper to taste
- Oil 3 tablespoons
- Onion 1
- Red bell pepper 1
- Garlic paste 1 teaspoon
- Pineapple can or fresh pineapple 1
- Water as needed
- Light brown sugar 1 tablespoon (add less if you are using canned pineapples)
- Soy sauce 2 tablespoons
- Tomato puree 1 tablespoon
- Chili sauce 1 tablespoon or to taste
preparation:
- Add corn starch, all purpose flour, salt and black pepper to a bowl and mix.
- Cut chicken breasts into cubes and coat with this mixture.
- Deep fry these coated pieces over medium heat till they are completely cooked.
- Chop onions and bell peppers into cubes.
- Cut pineapple into bite sized pieces. If using canned pineapples, drain the water and dry them over a kitchen towel and cut into chunks.
- To make the sauce add tomato paste, light brown sugar and soy sauce in a bowl. Set aside.
- Heat oil in a pan and add capsicum, onions and fried chicken pieces. Sauté over very high heat.
- Add pineapples and the required amount of prepared sauce. Add chili sauce. Give a few stirs.
- Dish out and serve with rice. Enjoy!
