Ingredients
- Soft dates 2 cups, pitted
- Peanut butter 3/4 cup (up to 1 cup if the mixture is dry)
- Coconut oil 1 tbsp
- Cocoa powder 1 tbsp
Topping
- Nutella or melted brown chocolate
- Melted white chocolate
- Cranberries (optional)
Preparation
- Remove seeds from the dates and chop them into small pieces.
- Add to the chopper along with 3/4 cup peanut butter and chop into fine paste 4-5 minutes).
- Now check if the mixture is on the dry side add more peanut butter and chop again.
- Now add coconut oil and chop until fine smooth paste is formed.
- Lastly, add cocoa powder and chop again until the cocoa is well combined with the date mixture.
- Arrange on to a baking tray into 1.5 cm thick slab and refrigerate until cold (1-2 hours)
- Now apply nutella or melted chocolate evenly.
- Decorate with white chocolate and cranberries and cut into squares. Enjoy cold.
