Homemade Mini Samosas

Ingredients

Samosa Dough

This dough makes 16 mini samosas, 8 medium samosas or 4 big samosas.

  • Plain flour 1 cup
  • Samolina (suji) 1 tbsp
  • Oil 1 tbsp
  • Ajwain (carom seeds) 1/2 tsp
  • Salt 1/2 tsp
  • Water for kneading

Filling

  • Boiled potatoes 2-3 small
  • Onion 1 very small size, chopped
  • Fresh Coriander 2 tbsp chopped
  • Green chili 1 sliced
  • Lemon juice 1 tsp
  • Salt to taste
  • Chili flakes 1/4 tsp
  • Chili powder 1/2 tsp
  • Chat masala 1/4 tsp
  • Turmeric powder 1 pinch
  • Cumin powder 1/2 tsp
  • Coriander seeds 1 tsp crushed
  • Ajwain 2 pinches

Preparation

  1. Samosa Dough: In a bowl, add plain flour, salt, ajwain, oil and suji. Mix well until the oil is incorporated in the flour. Press the flour in the fist. If it holds shape the mixture is ready to add water.
  2. Add water little by little and knead the dough. It should be neither too soft nor too hard. Shape the dough into a ball. Apply some oil, cover and allow to stand for half an hour.
  3. Filling: To make the filling, mash the potatoes with hands, and add the ingredients. Mix.
  4. I have shared two methods of shaping samosas. Shape into samosas and deep fry in oil on medium flame.
  5. Enjoy with your favourite chutney.
