Hot & Spicy Peri Peri Chicken

Ingredients:

  • Boneless chicken 1 kg
  • Dried red chilies (or fresh birds eye chilies) 7-10
  • Big red capsicum/bell-pepper 1
  • Juice of one lemon
  • Salt 2 tsp
  • Oregano 1 tbsp
  • Red chili powder 2 tsp
  • Oil 1/2 cup
  • Paprika powder 2 tsp
  • Ginger paste 1 tsp
  • Vinegar 4 tbsp
  • Black pepper 1 tsp
  • Red or orange food coloring 1/4 tsp

 

preparation:

  1. Add red bell pepper, lemon, ginger, vinegar, oil and red/orange food color to a blender and blend.
  2. Add the remaining dry spices.
  3. Marinate the chicken with the spice mix for 1 hour.
  4. Grill over high heat until fully cooked.
  5. Use a hot coal and oil to give smoke to the chicken for a barbecue flavor.
  6. Pour the remaining marinade mixture in a pan and cook till it thickens.
  7. Pour over the chicken and serve with rice.
  8. Serve hot. Enjoy!
