Hot & Spicy Peri Peri Chicken
Ingredients:
- Boneless chicken 1 kg
- Dried red chilies (or fresh birds eye chilies) 7-10
- Big red capsicum/bell-pepper 1
- Juice of one lemon
- Salt 2 tsp
- Oregano 1 tbsp
- Red chili powder 2 tsp
- Oil 1/2 cup
- Paprika powder 2 tsp
- Ginger paste 1 tsp
- Vinegar 4 tbsp
- Black pepper 1 tsp
- Red or orange food coloring 1/4 tsp
preparation:
- Add red bell pepper, lemon, ginger, vinegar, oil and red/orange food color to a blender and blend.
- Add the remaining dry spices.
- Marinate the chicken with the spice mix for 1 hour.
- Grill over high heat until fully cooked.
- Use a hot coal and oil to give smoke to the chicken for a barbecue flavor.
- Pour the remaining marinade mixture in a pan and cook till it thickens.
- Pour over the chicken and serve with rice.
- Serve hot. Enjoy!
