Ingredients
- Dal maash 2 cups
- Onion 1 big
- Tomato 1 big
- Ginger and garlic paste 1 tsp
- Oil 1/4 cup
- Cloves (long) 4
- Salt to taste
- Red chili powder to taste
- Turmeric powder 3/4 tsp
- Cumin powder 1 +1/2 tsp
- Coriander powder 2 tsp
- Black pepper powder 1/2 tsp
- Water to cover the dal completely
Garnish
- Ginger 1 small piece, julienne cut
- Fresh coriander 1 handful. Chopped
- Green chilies 4-5
- Garam masala 1/2 tsp
Preparation
- Soak the lentil in water for 1 hour.
- Coarsely grind onion and tomato and add to the cooking pot.
- Add oil and ginger garlic paste and sauté until raw smell goes off.
- Add cloves, salt, red chili powder, turmeric powder, cumin powder, black pepper powder and coriander powder.
- Sauté for another minute or so.
- Wash the soaked lentil with fresh water, drain and add to the pot.
- Pour some water (enough to cover the lentil completely.
- Cover and cook on medium to low until dal mash is fully cooked. If need be, add some more water while cooking.
- Lastly, add garam masala, fresh coriander, green chilies and ginger.
- Mix and serve with roti!

Hotel Style Dal Maash (Urad Daal)
