Ingredients
- Chicken mince 2 kg (I used frozen chicken mince, you can make fresh mince)
- Onions 2 big
- Red bell pepper 1
- Green bell pepper 1
- Yellow bell pepper 1
- Fresh coriander 2 handful, chopped
- Garlic chopped 2 tbsp
- Ginger chopped 1 tbsp
- Green chili chopped (optional- as per taste)
- Lemon juice 2 tbsp
- Tomato paste 4 tbsp
- Salt to taste
- Black pepper powder to taste
- Paprika powder 2 tbsp
- Dried parsley 2 tbsp
- Sumac 2 tbsp (optional)
- Cumin powder 2 tbsp
- Coriander powder 2 tbsp
- Bread Slices 4-5, turned into crumbs
Preparation
- In a manual or electric chopper, chop onions, red, green and yellow bell peppers and drain out their juice using a strainer or a muslin cloth.
- NOTE: We do not need the juices in this recipe so instead of discarding you can add the juices to lentils or rice for extra flavor and nutrition.
- Chop fresh garlic, ginger and green chili in the chopper.
- Finely chop fresh coriander using knife and chopping board. Chopper is not needed here.
- Grind the bread slices into breadcrumbs.
- Now in a big mixing bowl, add chicken mince, drained bell peppers and onions, fresh coriander, green chili, garlic, ginger, lemon juice, and all the remaining ingredients.
- Mix well for at least 5-6 minutes. Cover and refrigerate for an hour to allow the flavors to infuse.
- Now shape into kebabs. You can shallow fry them in a pan, or grill them on a griller, or bake them in the air fryer/oven at 195°C for 10 minutes.
