Kachumar Chapli Kabab

Ingredients:

Marination:

  • Minced meat 1 kg
  • Coriander seeds 2 tbsp, lightly crushed
  • Ajwain (carom seeds) 1 tbsp, light crushed
  • Chili flakes 1/2 tbsp
  • Cumin powder 1.5 tbsp
  • Garam masala 1/2 tbsp
  • Anaar dana (pomegranate seeds) 1.5 tbsp
  • Salt to taste
  • Black pepper 1/4 tsp
  • Butter 1/2 cup, room temperature

Other:

  • Oil 1/4 cup
  • Onions 2 medium, chopped
  • Garlic cloves 6, grated
  • Ginger 2 inch, grated
  • Green chilies 2-3, chopped
  • Tomatoes 3 big, cut into large chunks
  • Chopped coriander handful

Garnish

  • Lemon slices
  • Onion slices
  • Sliced green chilies

Chutney

  • Yogurt
  • Imli Paste
  • Cumin seeds
  • Chat masala
  • Salt
  • Chopped coriander

Preparation:

  1. Add all the marination ingredients to the minced meat and knead for 5-8 minutes.
  2. Allow to marinate for 2 hours at least.
  3. Heat oil in a pot and add onions.
  4. When translucent, add grated ginger, grated garlic and g2-3 chopped green chilies.
  5. Allow the aroma to go away and add minced meat to the onions.
  6. Mix and allow to cook until the smell of the meat goes away.
  7. Now add to cups of water, cover and cook for 45 minutes.
  8. When the oil separates from the mince, add chopped tomatoes and fresh coriander.
  9. Cover and cook on low until the tomatoes become soft but their shape is retained.
  10. Now smoke the minced meat with a love charcoal and serve with yogurt imli chutney and naan.
