Ingredients
Spice Mix
- Green cardamom 6
- Cloves 6
- Cinnamon stick 1 inch
- Nutmeg/Jaifal 1
- Mace/Javitri 1 flower
Other ingredients
- Oil 1 cup
- Mutton/beef 1 kg
- Onions 3 medium (250 grams)
- Black peppercorns 10
- Cloves 10
- Green cardamoms 10
- Black cardamoms 2
- Cinnamon sticks 2
- Bay leaves 2-3
- Mace/Javitri 2 flowers
- Star anise 1
- Yogurt 1 cup, whisked
- Ginger paste 1 tbsp
- Garlic paste 1 tbsp
- Salt to taste
- Red chili powder to taste
- Kashmiri red chili powder 1 tsp or more
- Garam masala 1/2 tsp
- Coriander powder 2 tsp heaped
Preparation
- Grind the ingredients under “Spice Mix” and keep aside for later use.
- Heat oil in your cookware and add thinly sliced onions.
- Fry until just start to turn golden and take out on to a plate.
- Crush the fried golden onions using your hands and keep aside for late use.
- To the same oil, add mutton and all the ingredients under “other ingredients” to the pot.
- Mix, cover and cook on low flame for 1 hour until meat is tender.
- NOTE: Meat and yogurt will release water therefore you might not need to add more water.
- After one hour, when the meat is fully cooked, add powder masala and ‘bhoonify’ to extract more flavors from the meat and to get rid of the peculiar red meat odor at the same time.
- Bhoonify until the masala releases the oil.
- Lastly add the crushed onions and 1 cup of water. Cover and cook on low flame for 10 minutes.
