Ingredients
Marination
- Lemon rind 1 tbsp
- Salt 3/4 tsp or to taste
- Oregano 4 tsp
- Fried onions 1 tsp (optional)
- Black pepper powder 1/2 tsp
- Lemon juice 4 tbsp
- Chicken thighs (or any other pieces) 1 kg
Other
- Rice 2 cups, soaked in water
- Onions 3 small, finely chopped
- Garlic cloves 8, finely chopped
- Oil 5-6 tbsp
- Chicken cubes 2
- Water 4 cups
- Lemon juice 3-4 tbsp
- Lemon slice 5-6
- Fresh coriander for garnishing
Preparation
- Marinate the chicken pieces with the marination ingredients for half an hour.
- In a wok, add oil and chicken pieces. Sear on both sides at high heat.
- Now turn the flame to medium low and allow to cook until 100% done.
- Take out on a plate for later use.
- In the same oil, add chopped onions, garlic and leftover marinade. Sauté until golden brown.
- Add 4 cups of water and 2 chicken cubes. Allow to boil and add drained rice.
- Cover and cook on medium until the rice absorb water.
- You can add salt, black pepper and lemon juice according to your taste at this stage.
- Lastly, when all the water has been absorbed by the rice, put lemon slices on top and put on dum (steam) for 10-12 minutes.
- Garnish with freshly chopped coriander and serve. Enjoy!
Lemon Chicken Rice
