Lemon Chicken Rice

Ingredients

Marination

  • Lemon rind 1 tbsp
  • Salt 3/4 tsp or to taste
  • Oregano 4 tsp
  • Fried onions 1 tsp (optional)
  • Black pepper powder 1/2 tsp
  • Lemon juice 4 tbsp
  • Chicken thighs (or any other pieces) 1 kg

Other

  • Rice 2 cups, soaked in water
  • Onions 3 small, finely chopped
  • Garlic cloves 8, finely chopped
  • Oil 5-6 tbsp
  • Chicken cubes 2
  • Water 4 cups
  • Lemon juice 3-4 tbsp
  • Lemon slice 5-6
  • Fresh coriander for garnishing

Preparation

  1. Marinate the chicken pieces with the marination ingredients for half an hour.
  2. In a wok, add oil and chicken pieces. Sear on both sides at high heat.
  3. Now turn the flame to medium low and allow to cook until 100% done.
  4. Take out on a plate for later use.
  5. In the same oil, add chopped onions, garlic and leftover marinade. Sauté until golden brown.
  6. Add 4 cups of water and 2 chicken cubes. Allow to boil and add drained rice.
  7. Cover and cook on medium until the rice absorb water.
  8. You can add salt, black pepper and lemon juice according to your taste at this stage.
  9. Lastly, when all the water has been absorbed by the rice, put lemon slices on top and put on dum (steam) for 10-12 minutes.
  10. Garnish with freshly chopped coriander and serve. Enjoy!
