Mango Lime Rice
Ingredients
- Boiled Rice 3 cups
- Mango (should not be too soft) 1 big, chopped
- Red bell pepper 1, chopped
- Green bell pepper 1, chopped
- Oil 3 tbsp
- Garlic chopped 1 tsp
- Lime juice 3-4 tbsp
Preparation
- In a pot, heat oil and saute garlic until a bit browned.
- Add red and green bell pepper and stir fry at high heat until vibrant in color (1-2 minutes).
- Add rice, salt and black pepper and stir fry until all mixed.
- Lastly, add chopped mango and lime juice. Stir and turn the flame off.
- Mango lime rice is ready to be served with Asian glazed chicken thighs.
- Enjoy!
