Ingredients
Dry roast
- Cumin seeds 1 tsp
- Coriander seeds 1 tsp
- Round red chilies 2-3
- Black peppercorns 1/2 tsp
Other
- Mutton/beef 1kg
- Oil 1/2 cup
- Ginger paste 1 tsp
- Garlic paste 1 tsp
- Onions 2 big, finely chopped
- Tomatoes 2-3 big, chopped
- Salt to taste
- Kashmiri red chili powder 1 tsp
- Turmeric powder 1/2 tsp
- Yogurt 1/2 cup
- Garam masala 1 tsp
- Green chilies, slit 1-2
- Julienne cut ginger 1 tsp
- Fresh coriander chopped
Preparation
- Dry roast cumin seeds, coriander seeds, round red chilies and black peppercorns.
- Allow to cool and grind. Keep aside.
- In a wok, add oil and add ginger garlic paste.
- Sauté for a minute and add mutton.
- Cook in oil until the mutton is brown in color and there is no moisture in the wok.
- Take the mutton out on a plate.
- In the same oil, add onions and fry until start to turn golden.
- Add tomatoes, salt, chili powder, turmeric powder and ground dry roasted spices. Mix and cover and allow to cook on low flame until the tomatoes are soft and the gravy is well cooked and oil has separated from the gravy.
- Now add yogurt and mix. Add the fried mutton, add glass of water.
- Cover and allow to cook until the meat is fully cooked and oil rises to the top.
- Lastly. Garnish with ginger, garam masala, green chilies and fresh coriander.
- Serve with naan or roti. Enjoy!
