Masala Mutton Roast
Ingredients
Meat Preparation
- Mutton/Beef pieces with or without bone 1 kg
- Water as needed
- Salt to taste
Gravy
- Desi Ghee 3 tablespoons
- Onions 3 medium, chopped
- Ginger paste 1.5 tablespoons
- Garlic paste 1.5 tablespoons
- Turmeric powder 1/4 teaspoon
- Cumin powder 1/2 tablespoon
- Red chili powder 1/2 tablespoon
- Black pepper powder a pinch
- Yogurt 1 cup
- Green chillies 4-5
- Salt to taste [if needed]
- Garam masala 1/2 tablespoon
- Juice of half lemon
- Fresh coriander chopped
Preparation
- Boil the mutton/beef meat with salt until almost completely tender [90%]. Reserve the stock for later use.
- In a separate pan, add ghee and chopped onions. Fry until golden
- Add garlic and ginger paste. Stir-fry for a minute, then add the boiled mutton pieces and fry them for 5-6 minutes or until the smell from the boiled meat goes off.
- Now add turmeric powder, red chili powder and cumin powder, black pepper powder and yogurt and green chilies. Mix until the yogurt is well combined with the gravy.
- Add the stock to the gravy to adjust the consistency. Let this simmer for 7-10 minutes or until the masala is thick.
- Lastly, squeeze the lemon and sprinkle the garam masala. Adjust salt if needed. Cover and simmer for Simmer for 1 more minute and turn the flame off.
- Garnish with freshly chopped coriander.
- Enjoy with nan, roti or paratha.
