Masala Mutton Roast

Ingredients

Meat Preparation

  • Mutton/Beef pieces with or without bone 1 kg
  • Water as needed
  • Salt to taste

Gravy

  • Desi Ghee 3 tablespoons
  • Onions 3 medium, chopped
  • Ginger paste 1.5 tablespoons
  • Garlic paste 1.5 tablespoons
  • Turmeric powder 1/4 teaspoon
  • Cumin powder 1/2 tablespoon
  • Red chili powder 1/2 tablespoon
  • Black pepper powder a pinch
  • Yogurt 1 cup
  • Green chillies 4-5
  • Salt to taste [if needed]
  • Garam masala 1/2 tablespoon
  • Juice of half lemon
  • Fresh coriander chopped

Preparation

  1. Boil the mutton/beef meat with salt until almost completely tender [90%]. Reserve the stock for later use.
  2. In a separate pan, add ghee and chopped onions. Fry until golden
  3. Add garlic and ginger paste. Stir-fry for a minute, then add the boiled mutton pieces and fry them for 5-6 minutes or until the smell from the boiled meat goes off.
  4. Now add turmeric powder, red chili powder and cumin powder, black pepper powder and yogurt and green chilies. Mix until the yogurt is well combined with the gravy.
  5. Add the stock to the gravy to adjust the consistency. Let this simmer for 7-10 minutes or until the masala is thick.
  6. Lastly, squeeze the lemon and sprinkle the garam masala. Adjust salt if needed. Cover and simmer for Simmer for 1 more minute and turn the flame off.
  7. Garnish with freshly chopped coriander.
  8. Enjoy with nan, roti or paratha.
