Mexican Chicken Fajita Rice
Ingredients For spice mix:
- Chili powder 1-2 tsp
- Paprika powder 2 tsp
- Garlic Powder 1.5 tsp
- Cumin powder 2 tsp
- Salt 2 tsp
- Dried Oregano 2 tsp
- Black Pepper Powder 1/2 tsp
Ingredients for Chicken marinade:
- Chicken breast halves 3
- Olive Oil 1/4 cup
- Lime Juice 4 tbsp
- Spice mix 3 tbsp
ingredients For Rice:
- Rice 3 Cups
- Red Bell Pepper sliced 1
- Green Bell Pepper sliced 1
- Onion 1 medium sized
- Chicken cubes 1-2
- Lemon Wedges for garnishing
- Cilantro for garnishing
preparation:
- Wash the rice until the water runs clear. Soak for about an hour.
- Mix the ingredients to make the spice mix. Keep aside.
- Pound the chicken pieces to flatten them and cut into big chunks.
- Marinate with 3 tablespoons of spice mix for half an hour.
- Heat a few tablespoons of oil in a pan or a grill. Add the chicken pieces and cook fully until charred on each side. Take out in a dish and keep aside for later.
- For the rice, thinly slice the onion sauté in 2 teaspoons oil until translucent.
- Thinly slice the green and the red bell pepper. Add to the onions and saute for half a minute. Do not allow them to soften.
- Add rice and 5-6 cups of water (depending on your rice).
- Crumble up the chicken cubes and add to the rice.
- Add the remaining fajita spice mix.
- Put the chicken pieces on the rice and cook on medium flame until the water almost evaporates.
- Then cover the pan and allow to steam until the rice is cooked, for 10-15 minutes
- Garnish with the cilantro and lemon wedges. Enjoy!
