Ingredients
Bell pepper stuffing
- Bell peppers 6, large
- Onions 2 medium, finely chopped
- Carrot 1
- Tomatoes 2 big, cut into chunks
- Ginger paste 1 tsp
- Garlic paste 1 tsp
- Chicken mince 500 grams
- Tomato paste 2 tbsp
- Black pepper powder 1/2 tsp (or more to taste)
- Red pepper flakes 1/2 tsp
- Salt 1 tsp or to taste
- Boiled rice 2 cups
Cooking
- Oil 1 tbsp
- Tomato paste (or ketchup 1/2 cup)
Preparation
- Cut the very tops of the bell peppers and remove the seeds.
- Remove the stems and chop the leftover bell pepper tops finely.
- Chop the carrot finely.
- Heat oil in a cooking pot and add the tomatoes. Cook until little soft.
- Add the chopped onions, carrots and chopped bell peppers.
- Stir for one minute at high and add the chicken mince. Give it a good stir and add tomato paste, salt, black pepper powder and chili flakes.
- Cook the chicken mince properly. Make sure there is no moisture left in the chicken mince.
- Lastly add boiled rice and mix well. Cover and allow to cook on lowest heat for 5 minutes.
- Now remove the rice from the pot into a bowl. In te same pot, add 1 tbsp oil and 1/2 cup tomato paste (or ketchup). Cook for half a minute and place the bell peppers in the pot.
- Fill them with rice add the remaining rice into the pot.
- Cover and cook on lowest heat for 40-45 minutes until the bell peppers are tender.
