Mini Chicken Breads

Ingredients for dough

  • Plain flour 3 cups
  • Instant Yeast 1 tbsp
  • Sugar 1tbsp
  • Salt 1 tsp
  • Oil 2 tbsp
  • Milk 1/2 cup (Lukewarm)
  • Egg 1 (at room temperature)
  • Lukewarm water 3/4 cup (might need more or less)

Filling

  • Shredded boiled Chicken 1.5 cup
  • Mozzarella cheese 1 cup
  • Green bell pepper 1, sliced
  • Oregano 1/2 tsp
  • Basil 1/2 tsp (optional)
  • Parsley 1/2 tsp (optional) or add fresh chopped coriander
  • Black pepper 1/4 tsp
  • Garlic powder 1 tsp
  • Salt if needed (Mozzarella cheese already contains salt)
  • Cream cheese 2-3 tbsp heaped
  • Mayonnaise 2-3 tbsp heaped
  • Ketchup 2-3 tbsp heaped

Topping

  • Black sesame seeds or nigella seeds 1-2 tsp
  • 1 egg whisked with 2 tbsp water

Preparation

  1. In a mixing bowl, add plain flour, instant yeast, sugar and salt. Mix.
  2. In a small bowl add oil, milk and egg. Beat well and add to the flour.
  3. Mix lightly and add lukewarm water little by little and knead into a soft dough.
  4. Knead the dough for 7-8 minutes until smooth.
  5. Cover and allow to rise until double in size (about 30-35 minutes).
  6. While the dough is rising, make the filling by mixing all the ingredients of filling and keep aside.
  7. When the dough is double in size, take out and deflate using hands.
  8. Now divide the dough into 16 parts and shape into balls.
  9. Start the oven preheating at 180°C.
  10. Roll each ball into oval shape.
  11. Take one oval shape dough and place chicken filling.
  12. Roll into a bread as shown in the video and put a few slits on top.
  13. Repeat with the rest of the dough balls.
  14. Brush the top with egg wash and sprinkle some sesame seeds/nigella seeds.
  15. Bake in a preheated oven at 180°C for 10-12 minutes until the top of the bread is golden brown.
