Mini Oreo Berry Cheesecakes

Ingredients

  • Cold whipping cream 3/4 cup
  • Powdered sugar 1/2 cup or less to taste
  • Cold Cream cheese 1/2 cup [I used Philadelphia]
  • Vanilla essence 1 teaspoon
  • Oreos 6
  • Strawberry jam 3-4 teaspoons

 

Preparation

  1. Whip the chilled whipping cream and powdered sugar until firm peaks start to form. Note: peaks should not be too stiff.
  2. In another bowl, add chilled cream cheese and vanilla and beat until there are no lumps.
  3. Now add 1/4th of the whipped cream and fold the mixture in using a spatula. Do not beat the mixture or it might break.
  4. Repeat the process until all the whipped cream is folded into the cream cheese.
  5. Place 6 muffin cups in a muffin tin.
  6. Place one Oreo in each muffin cup.
  7. Now fill with cream cheese mixture. Level the muffin cups and spread a small dollop of your favorite jam on top. Evenly spread it on the cups.
  8. Refrigerate for at least 4-5 hours, or overnight,
  9. If you are in a hurry, place them in the freezer for 1 hour and as soon as they firm up, transfer to the refrigerator. 
  10. Take out form the muffin cups and serve immediately.
  11. Enjoy!
