Mini Oreo Berry Cheesecakes
Ingredients
- Cold whipping cream 3/4 cup
- Powdered sugar 1/2 cup or less to taste
- Cold Cream cheese 1/2 cup [I used Philadelphia]
- Vanilla essence 1 teaspoon
- Oreos 6
- Strawberry jam 3-4 teaspoons
Preparation
- Whip the chilled whipping cream and powdered sugar until firm peaks start to form. Note: peaks should not be too stiff.
- In another bowl, add chilled cream cheese and vanilla and beat until there are no lumps.
- Now add 1/4th of the whipped cream and fold the mixture in using a spatula. Do not beat the mixture or it might break.
- Repeat the process until all the whipped cream is folded into the cream cheese.
- Place 6 muffin cups in a muffin tin.
- Place one Oreo in each muffin cup.
- Now fill with cream cheese mixture. Level the muffin cups and spread a small dollop of your favorite jam on top. Evenly spread it on the cups.
- Refrigerate for at least 4-5 hours, or overnight,
- If you are in a hurry, place them in the freezer for 1 hour and as soon as they firm up, transfer to the refrigerator.
- Take out form the muffin cups and serve immediately.
