Mint Pulao

Ingredients

Mint paste

  • Onion 1/2
  • Ginger 1 inch
  • Garlic cloves 3
  • Coriander 2 handfuls
  • Mint 2 handfuls
  • Green chili 1-2
  • Star anise 1
  • Cloves 5
  • Black peppercorns 5
  • Cinnamon stick 1
  • Green cardamoms 3

Other

  • Rice 1 cup, soaked in water
  • Cumin seeds 1 tsp
  • Bay leaves 2
  • Onion 1, sliced
  • Tomato 1 , chopped
  • Green beans 1/2 cup
  • Corn 1/2 cup
  • Peas 1/2 cup
  • Carrot sliced, 1
  • Bell pepper 1/2 chopped
  • Salt
  • Water 2 cups

Preparation

  1. Make a paste of all the above-mentioned ingredients using very little water. Keep aside.
  2. Heat oil in a cooking pot and add cumin seeds, bay leaves, onion and tomato. Cook until tomatoes are soft.
  3. Add the veggies and sauté for 4-5 minutes.
  4. Add mint paste and mix.
  5. Immediately add 2 cups of water, salt and well drained rice.
  6. Mix and turn the flame high to allow the water to start boiling.
  7. Now turn the flame medium and allow to cook until the rice absorbs all the water.
  8. Now put the rice on dum for 10-15 minutes.
  9. Mint rice is ready. Serve and enjoy!
