Ingredients
- Black lentil 1.5 cups
- Onion 1, chopped
- Olive oil 2 tbsp
- Cumin powder 1.5 tsp
- Coriander powder 1.5 tsp
- Turmeric powder 1.5 tsp
- Cinnamon powder 3/4 tsp
- Black pepper powder 1/2 tsp or more to taste
- Carrots 2, chopped
- Water 5 cups + Chicken cubes 3 (or you can use chicken broth)
- Salt if needed
- Tomato 1 chopped
- Lemon juice 3-4 tbsp
- Fresh coriander leaves, chopped
Preparation
- Heat oil in a pot and saute chopped onions until soft.
- Add powdered spices (cumin, coriander, turmeric, cinnamon, black pepper) and carrots and saute for 1 minute.
- Next add water and chicken cubes and tomatoes.
- Cover and cook on low for 30-40 minutes until lentil is cooked.
- Turn the flame off. Wait for 2 minutes and add lemon juice.
- Top with fresh coriander and serve immediately with rice.
- Enjoy!
Moroccan Lentil Curry
