Ingredients (for 8 rotis)
- Aata (wheat flour) 3 cups
- Salt 1/3 tsp
- Baking powder 1 tsp
- Baking soda 1/4 tsp
- Yogurt 3/4 cup
- Oil 2 tbsp
- Water as needed (less than a cup)
Aata Glue
- Aata 1 tbsp
- Water as needed to make a thin paste
Preparation
- NOTE: I did not use any measuring cups or spoons for this recipe. Any cup and spoon would do.
- In a mixing bowl, add aata, salt, baking powder and baking soda. Mix well.
- Add yogurt and oil and mix roughly.
- Now start kneading by adding a little water at a time into a soft dough.
- Once the dough is formed, knead for 7-8 more minutes. This will result in soft rotiform inside but crunchy from outside.
- Cover and allow to stand for preferably 1.5 hour or at least 1 hour (not less than that).
- Now shape into 8 balls.
- Heat a pan or tawa on medium to high heat. Non-stick is also fine.
- Roll a dough ball into a a little thick roti and apply aata glue with a brush.
- Now place the roti on tawa (glue side down) and quickly press it on the tawa using your hands.
- Allow the bubbles to form on the roti. In 1 minute or so, whole roti will have bubbles. Now flip the tawa and cook the roti’s top side on direct flame.
- Repeat for the other rotis.
- Enjoy!
No Fail Tandoori Roti on Tawa
