Noodles Egg Casserole
Ingredients
- Onion 1/2, Cubed
- Bell peppers, cubed
- Oil 1 tbsp
- Tomato Paste 1 tbsp
- Water 1.5 cups
- Noodles packets 3
- Eggs 4
- Salt a pinch
- Cheddar cheese 1 cup (or mozzarella cheese)
- Sun dried tomato for topping (optional)
Preparation
- Heat oil in a casserole and add onions, bell peppers and sauté until vibrant in colors.
- Add tomato paste and mix.
- Add water and noodles, cover and allow the noodles to cook on low flame.
- When the water evaporates, beat the eggs and salt and pour onto the noodles evenly. Turn the flame as low as possible.
- Sprinkle some cheese on top and the sun dried tomatoes.
- Cover and allow to cook for 5-8 minutes or until the eggs are cooked through.
- Slice and serve immediately. Enjoy!
