One Pot Spanish Rice

One Pot Spanish Rice

Ingredients

  • Rice 2 cups, washed and soaked for 30 minutes
  • Oil 2 tbsp
  • Butter 2 tbsp
  • Tomatoes 4 medium sized, chopped
  • Water 1.5 cups + Chicken Cubes 1.5 (or 1.5 cups chicken broth)
  • Tomato paste 1 tbsp (or ketchup 2 tbsp)
  • Cumin powder 2 tsp
  • Garlic powder 1 tsp
  • Oregano 1 tsp
  • Sugar 1 tsp or less (just to cut down the acidity of the tomatoes)

 

Preparation

  1. Wash and soak the rice for at least 30 minutes.
  2. In a pot add oil and butter and melt.
  3. Drain the water from the rice and add the rice to the pot.
  4. Stir fry the rice until the oil and moisture is absorbed by the rice and the pot looks dry.
  5. Add chopped tomatoes and water and give a mix. Turn the flame low.
  6. Add tomato puree, cumin powder, garlic powder, oregano and chicken cubes.
  7. Taste and add sugar just to cut down the acidity from the tomatoes.
  8. Mix, cover and cook on very low flame until the rice are done (about 5-10 minutes).
  9. Serve hot with my spicy popcorn chicken.
