Ingredients
- Spinach 4 handful sized bunch, chopped
- Desi ghee (Clarified butter) 2 tbsp
- Onion 1 medium, chopped
- Cumin seeds 1 tsp
- Dried red chili 2-3
- Garlic paste 1 tsp
- Ginger paste 1 tsp
- Salt to taste
- Red chili powder 1/2 tsp or more to taste
- Turmeric powder 1/2 tsp
- Cottage cheese cubes 2 cups
- Garam masala powder 1/2 tsp
- Coriander powder 3/4 tsp
- Green chilies 4-5, whole or chopped (as per the choice)
Preparation
- Wash the chopped spinach and drain.
- Add to the cooking pot, turn the flame medium, cover and let the spinach wilt, or soften.
- Allow to cool a bit and blend to a smooth paste and transfer it back to the same cooking pot.
- In a frying pan, heat desi ghee and add onion, cumin seeds and dried red chilies.
- Cook until the onions are soft.
- Add ginger paste and garlic paste and fry until the raw smell is gone.
- Pour this mixture into the blended spinach.
- Add salt, red chili powder and turmeric powder. Mix.
- Allow to cook until all the water from the spinach evaporates.
- Add cottage cheese cubes, give a stir so that the cubes are coated with spinach.
- Add garam masala, coriander powder and green chilies.
- Give a mix so that the masalas are mixed in.
- Palak paneer is ready.
- Serve with roti, naan, paratha or even boiled rice.
