Plain Vanilla Tea Cake with Coconut Frosting

Ingredients

  • Eggs 2 at room temperature
  • Vanilla essence 1 tsp
  • Sugar 2/3 cup
  • Milk 1/4 cup at room temperature
  • Oil 1/2 cup
  • All-purpose flour 1 cup
  • Baking powder 1 tsp

Preparation

  1. Preheat the oven to 160°
  2. In bowl, whisk eggs and vanilla until frothy and.
  3. Add sugar and beat until glossy and creamy.
  4. Add milk and oil and whisk for 1 more minute.
  5. Now add baking powder and all-purpose flour and mix until just combined.
  6. Add to an 8-inch greased baking tin and bake at 160°C for 30-35 minutes or until toothpick inserted comes out clean.
  7. Allow to cool to room temperature in the baking tin and then take out in a serving dish.
  8. Pour glaze all over it and top with desiccated coconut.
  9. Enjoy with tea or coffee.
