Plain Vanilla Tea Cake with Coconut Frosting
Ingredients
- Eggs 2 at room temperature
- Vanilla essence 1 tsp
- Sugar 2/3 cup
- Milk 1/4 cup at room temperature
- Oil 1/2 cup
- All-purpose flour 1 cup
- Baking powder 1 tsp
Preparation
- Preheat the oven to 160°
- In bowl, whisk eggs and vanilla until frothy and.
- Add sugar and beat until glossy and creamy.
- Add milk and oil and whisk for 1 more minute.
- Now add baking powder and all-purpose flour and mix until just combined.
- Add to an 8-inch greased baking tin and bake at 160°C for 30-35 minutes or until toothpick inserted comes out clean.
- Allow to cool to room temperature in the baking tin and then take out in a serving dish.
- Pour glaze all over it and top with desiccated coconut.
- Enjoy with tea or coffee.
